Vegan Pancakes[1]

  • 1 1⁄4 cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1⁄2 teaspoon fine sea salt
  • 1 1⁄2 cups non-dairy milk
  • 2 tablespoons refined coconut oil, melted, or safflower oil
  • 2 tablespoon maple syrup, plus more for serving
  • 1 teaspoon pure vanilla extract
  • 1 Cup Blueberries

INSTRUCTIONS

In a large bowl, whisk together the flour, baking powder, and salt. In a medium bowl, whisk together the rice milk, oil, maple syrup, and vanilla. Whisk the milk mixture into the flour mixture, stirring just until combined (a few lumps are okay). Preheat a nonstick griddle or large nonstick skillet over medium heat for at least 2 minutes. About 1⁄4 cup at a time, pour the batter onto the grill or skillet. Cook until bubbles appear, the edges are set, and the pancakes are nicely browned on the bottom (about 2 to 3 minutes). Turn and cook until the other side is nicely browned, 1 to 2 minutes.

The Story

Once upon a time there was a woman who thought blueberry pancakes were mana from heaven. She was in her mid-twenties and her boyfriend asked her to stop over at his house in the middle of a snow storm on the way back to school. When she arrived there were warm delicious blueberry pancakes, a bar of delicious vegan chocolate, and written in rose petals were the words, “Will You Marry Me?” She said yes, then years later became an Episcopal Deacon. Okay, you got me, this is not a fairy tale I am that woman!

My favorite food in the world are blueberry pancakes; and this is the recipe that has begun this beautiful chapter in my life. The catch to my eating is that I cannot eat dairy. I became highly allergic to dairy after going on a mission trip to Nicaragua. I am very fortunate that it is very manageable. Due to personal and health reasons I try to stay away from meat as well (fish is still in; sushi is delicious!). So, if you see me at an event not eating or over by the vegetables (yum!) please know that I am not trying to be rude.

Because I enjoy food, I wanted to share with you one of my favorite recipes with you.
